Dry Chicken Masala Recipe

Another Indian dish coming right up friends! This time, I am going to share with you, a chicken masala recipe I got from my mother in law, as usual. She is always very supportive when I try to bug her and ask about all the different spices, leaves, powders even when she is busy cooking. I get really confused with all the names and the looks of all the different ingredients, that I have to take pictures for reference, just in case.

You must be wondering what is masala. Well, masala is actually a mixture of spices which is dry powdered or paste form. It is used to flavor a lot of traditional Indian dishes. There are several variations of the mixture and the ingredients depends on what it is used for. I will be using Chicken Masala powder for this specific recipe.

The chicken masala recipe you might know must be with sauce or curry, but this one I am sharing now came up because my mother in law’s innate ingenuity. She knows that my son, hate curry and would prefer his chicken dry, something like a simple fried chicken drumstick, just like the Filipino style fried chicken recipe I posted recently.

  • 2 lbs of chicken boneless meat ( you can also opt to include the whole chicken pieces with the bones)
  • 1 tsp salt
  • 3 tbsp cooking oil
  • 1 medium sized onion, sliced into small pieces
  • ½ tsp chicken masala powder
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • 1 tsp ginger garlic paste
  • ¼ tsp cumin powder
  • Chili powder according to your taste, if at all you want it spicy
  • ½ cup water

  1. In a medium sized frying pan, heat the cooking oil and saute the onion until fragrant
  2. Put the chicken pieces, mix the ginger garlic paste and cook for 1 minute
  3. Put the chicken masala powder, turmeric powder, cumin powder and coriander powder. Cook for another minute
  4. Put the water, and cover. Cook in medium heat until the water boils
  5. Simmer until the chicken is dry, make sure not to burn the chicken
  6. Serve and garnish with coriander leaves or curry leaves


This dry chicken masala dish goes well with warm rice or roti. It is even good for sandwiches. There are several variations of the chicken masala dish, even hundreds and this is one of my fave. So there you go, til my next post! Thanks for reading :-)
