There are several variations on preparing fried chicken, but the Filipino style fried chicken will always be my favorite. I like my chicken without breading, and this is how Filipinos fry their chicken. I have grown up eating this recipe and I will never want my fried chicken cooked any other way.
The Filipino style fried chicken gets its flavor from a marinade made of soya sauce, calamansi (golden lime), pepper. It is then dusted with a little flour and cornstarch which make the Filipino style chicken naturally crispy.
This fried chicken recipe is very easy to prepare. It is so easy that I actually end up preparing this dish if at all I am too lazy to cook. My son loves it, that is all what matters to me anyway.
- 2 pounds chicken legs or thighs
- ½ cup soya sauce
- ¼ cup calamansi or golden lime juice
- 3 to 4 cloves garlic, peeled, minced and sliced to small pieces
- ½ teaspoon black pepper
- ½ teaspoon salt
- ¼ cup flour
- ¼ cup corn starch
- ½ cup cooking oil
- Rub the calamansi juice and the garlic all over the chicken pieces. Make sure that all the areas are covered.
- Pour the soya sauce, add salt and ground black pepper.
- Place the chicken marinade in the refrigerator for at least an hour for the flavor to seep in.
- Drain chicken from marinade
- In a dish, combine the flour and the corn starch
- In a shallow dish, combine corn starch and flour. Spread the chicken pieces in flour mixture and make sure to coat fully.
- In a wide, thick-bottomed pan over medium heat, heat about 2 inches of oil and cook the chicken turning on sides, until golden brown and crisp
- Remove from pan and placed in a plate covered with tissue paper to let the excess oil drain.
- Serve while hot and crispy. This will go really nice with tomato or banana ketchup!
